The pop-out chat link no longer uses the old style chat. However, it is still a nice way to save on memory and be able to refresh without losing both chat and video.

The easiest way to do this is to open the pop-out chat in a browser window. Log in. (Type a period in the chat line—hit enter. This will open the login screen.) Size this chat window to equal about 1/3 of your desktop space.

Then open a new window or tab (Ctrl-T or Ctrl-N in most browsers) and use it to open the pop-out video. If you opened a new tab, you can then click on the tab and drag it to an open space on your desktop. Size it to about 2/3 of your desktop space beside the chat.

Now you have both open and can refresh one without disturbing the other. You can resize either without resizing the other.

  Hello Vriends,  
Just wanted to give a shout-out to everyone--Mary and I are getting ready to go to the Fair again! Today is the last day of the Solano County fair. Tthis is my "home fair" because Vacaville is in Solano County. The other county fairs I have entered (Napa, Yolo, and the Dixon May Fair) have all been in neighboring areas. I have not yet been to the Solano fair--so today I shall find out if I have added anything to my ribbon count for the year. Just yesterday I had to drive to Sacramento to pick up my photos and ribbons from the State Fair. Five ribbons--and they are all so pretty!

Mary and I went to the State Fair for the last time last Sunday--the last day of the fair. Oh man, was that ever hot! The temperature hit 106 while we were there, so we stuck mostly to the indoor displays--wherever there was air conditioning. It was exhausting, but it was fun. I even got a few pictures of Zorro there! So for it being my first ever time of attending the State Fair, it was a whole lot of fun!

This last week I have started a contract with a Chinese Christian school in Rhonert Park. That's about 55 miles from home, so it makes for quite a commute. Fortunately that commute runs right through the Napa Valley, so I have been taking my camera with me and on a couple of days I did some photo-taking on the drive home. There are a number of really picturesque barns and old train stations along the way, as well as some rusty old farm equipment and vehicles. So basically, I'm trying to get some of the photos that I might be entering into the fairs in 2017! (And thanks to the money I'm making in the job, I should be able to afford some film for it!)

Well, the fair has officially opened now, so I guess it is time to finish getting ready and then off we go! I see a funnel cake in my near future...

I hope to see you all at the next VacaChat, which will be on August 7th (if Ustream and Comcast be willing)!

Please pray for the fostering and healing of relationships between races and ethnicities, between citizens and law enforcement and other officials, and between differing faiths.

  Jes Jes has requested prayers. She has lost a close friend and is also facing some rather daunting medical tests and procedures. She is, of course, worried and stressed, and in need of all our prayers and healing vibes.

  Marilyn Crabb UPDATE:  Hi! I survived six months of chemotherapy. I'll have my breast tumor and left axillary nodes removed on Friday, Feb. 13. Radiation will be next. Please pray that the surgeon does a good job and all my cancer is removed!

  Littleguys  UPDATE: (as of 10/25/2015)  
Amazing what an injection in the right place can accomplish! My back started really hurting over two years ago, to the point I couldn't show my horses "in hand" when I would have to walk beside them, etc, and it was painful to lean over to harness them. I was diagnosed with sciatica, meaning the hole in the vertebrae where the sciatic nerve leaves the spine to go to the left leg was filling up with arthritis.

But the doctors wouldn't fix it in 2014 because the Stage Zero Breast Cancer was more important. In 2015, cancer free, it was time to fix the back. I did get that injection for the sciatica last summer, and some relief, but that doctor told me something no other doctor had told me. Half of the pain I was experiencing as I walked, stood, etc was due to the sacroiliac joint where the spine meets the left side of the pelvis. Got a shot, well, three right in that joint Thursday and cannot believe how much better it is to walk and stand. Why couldn't they do that two years ago???  Not a magic wand, but so much better,
 
       
  Elsalynda (as of 3/27) Keep Elsalynda in your prayers. Elsa was recently in Mexico and had a great time until she was hospitalized there! Keep her in your prayers for continued good health for herself and her bird Nupi.

  Shari in Memphis UPDATE!!! We heard from Shari recently. She is now on the VacaNews mailing list, so we'll be able to keep in touch with her more easily. She tells us, "Hi guys! Shari in Memphis is alive. I've been having tons of health problems, so that's tons of doc appointments! I have moved to northern Arkansas, for health reasons, and looking forward to hub moving up here in a couple of years, when he retires. It's gorgeous in the country, and I love that we were able to find a place on a stream. Lots of wild animals around! I miss you all.

  Hello there, Everbuddy!  
 
I hope you all had a good week, and are enjoying the weekend! It has been over a hundred degrees here all week, but we have been getting some cooling this weekend and into next week. That is nice, because I can only take off so much fur.

Last weekend I got to go to the State Fair! That was so much fun--even though it was pretty hot. But boy did we get to eat come crazy things. I ate a deep-fried Twinkie! I thought it was going to taste really yucky (not that I ever truly rule-out the eating of yucky things), but actually it was delicious. It tasted a lot like a pancake. The spongecake on the outside gets crisped and browned, and the creme filling caramelizes to the point that it doesn't taste too unlike syrup. The Dudette had some deep-fried cookie dough, and the Dude had a deep fried artichoke heart. Boy, humans will shove just about anything into boiling oil! (Thankfully they tend to stop short of mice.)

Today we are heading to the Solano County fair--and hopefully Freddy will not be the only one having fun. I am hoping to get another corn dog today. I'll try not to drop it like the last one... Then next month is the Yolo County Fair, and that should do it for the year. Then we have to go out and take more pictures!

Well, it is just about time to get goink. We hope to see you all at the VacaChat next week! Until then...may all your Midway adventures be happy ones! (I don't even know what that means--the Dude has just been saying it a lot, so I figure it must mean something.)

Sauerkraut Pork Loin

 
     
  Ingredients:    
 

2 tablespoons brown mustard*
1 (4 pound) boneless pork loin roast
4 onions, sliced thick (divided)
½ cup brown sugar
1 cup unsweetened applesauce
1 (16 ounce) bag sauerkraut with juice
salt and pepper to taste
1½ cups chicken broth


 
       
Directions:
 

Preheat oven to 400°F.

Rub the mustard all over the pork loin.

Layer two of the sliced onions in the bottom of a large roasting pan. Set the pork loin on top.

Roast at 400°F for about one hour.

Remove loin from oven. Layer remaining onions, brown sugar, applesauce, and sauerkraut over loin.

Season with salt and black pepper to taste, then add the chicken broth.

Reduce oven heat to 325°F and return loin to the oven. Continue roasting until internal temperature of pork loin reaches 145-155°F. Remove from heat and let sit for 5-10 minutes before serving. (The internal temperature will continue to rise about 10 more degrees in that time.)


*We prefer honey mustard

 
     
 

Philly Cheesesteak Mac and Cheese

 
  Ingredients:    
1 tablespoon olive oil
1 medium yellow onion, sliced
2 medium green bell peppers, sliced
½-¾ pound of roast beef. sliced into small pieces
10 ounces shell pasta
2 eggs
1 cup evaporated milk
1 cup provolone, grated or thinly sliced
2 cups mild cheddar cheese, grated
½ teaspoon seasoned salt
       
  Directions:    
  Put a large pot of water onto boil for pasta.

Meanwhile, in a large skillet heat olive oil on medium heat and sauté onions and peppers until onions are translucent.

Add sliced roast beef and cook until heated through. Remove from heat and set aside.

The water should be boiling by now. Add pasta and cook until al dente, according to package directions.

Reserve 1 cup pasta water.

In a large Dutch Oven or saucepan whisk together eggs, evaporated milk, seasoned salt and both cheeses over medium heat. Continue whisking until cheese is melted and mixture is thick.

Add pasta into cheese mixture. Add reserved pasta water a few tablespoons at a time until mixture reaches desired consistency. Discard any remaining pasta water.

Stir in onions, pepper and roast beef, coating with cheese mixture, stirring until evenly combined.

Serve immediately.

You've heard about Vanilla Ice, Ice Cube, Ice-T? Apparently 'Ice' is a very popular name in the rap game.

Well, a new rapper has been making waves on the Internet and the underground rap scene. He's a young Jewish rapper with sick beats and dope rhymes.

He calls himself Ice-Berg.

For the first few months of her co-op job for the state of Georgia, my sister had nothing to do, so she surfed the Web or did crossword puzzles. One day she expressed her boredom to a co-worker.

"I know," she complained. "Everyone thinks state workers have it easy. But there's only so much you can pretend you're doing."

For days he kept leaving little messages around the house.

  The Sunday school teacher was carefully explaining the story of Elijah the Prophet and the false prophets of Baal.

She explained how Elijah built the altar, put wood upon it, cut the steer in pieces and laid it upon the altar.

And then Elijah commanded the people of God to fill four barrels of water and pour it over the altar. He had them do this four times.

"Now, said the teacher, "can anyone in the class tell me why the Lord would have Elijah pour water over the steer on the altar?"

A little girl in the back of the room raised her hand with great enthusiasm. "To make the gravy," came her enthusiastic reply.
 
     
  Old McDonald had a farm.

Yes, he was getting old. But he was never too old to learn, he figured.

He still tried to have the best farm in the country. Even though he was getting up in years, he did try new things. He wasn't set in his ways at all.

One day, after finishing all of his early morning chores, he went to the coffee shop and there were several men there that he hadn't met before.

After discussing much trivia, the subject came up about raising cows.

This immediately pricked Old McDonald's interest. He felt he had the best cows around but he was always open for improvement. He was an innovative farmer.

Well, one of the new gentlemen told him that contented cows produced more milk.

Old McDonald thought about that. And throughout the day he continued to think about that.

He thought that maybe his cows weren't as contented as they ought to be. He thought they were contented, but maybe they could be more contented.

So he devised a plan deep within his heart.

And the next day he began implementing it. He began going out every morning, first thing, and telling jokes to his cows so that they would truly be happy and contented.

The cows laughed and laughed! Every day they laughed!

He did this day after day after day. He knew that a merry heart did good like a medicine.

Lo and behold, his cows actually began producing more milk! A lot more milk! It was truly amazing!

Pretty soon, news got around about his cows.

And they became known as the laughing stock of the community.
