The pop-out chat link no longer uses the old style chat. However, it is still a nice way to save on memory and be able to refresh without losing both chat and video.

The easiest way to do this is to open the pop-out chat in a browser window. Log in. (Type a period in the chat line—hit enter. This will open the login screen.) Size this chat window to equal about 1/3 of your desktop space.

Then open a new window or tab (Ctrl-T or Ctrl-N in most browsers) and use it to open the pop-out video. If you opened a new tab, you can then click on the tab and drag it to an open space on your desktop. Size it to about 2/3 of your desktop space beside the chat.

Now you have both open and can refresh one without disturbing the other. You can resize either without resizing the other.

  Hello Vriends,  
Sorry about the mess last week, but it looks like it is the new norm for Comcast. This weekend my Internet access has been down more than it has been up. I see a lot of reports from watch agencies, but nothing from Comcast themselves, but there have been massive outages reported across the country for Comcast customers.

So to avoid a fiasco like last weekend, I think I am going to have to postpone the already postponed VacaChat broadcast. Hopefully Comcast can get it together sometime soon. I have a lot of projects coming up, and this is not helping.

Monday was a historical day for Mary and me--we went to the California State Fair! Despite both of us having lived our entire lives in California, it was a first time for both of us. It was a fun day, albeit a tad exhausting. By the time I had looked at several displays and collections, I had a terrible case of “museum feet,” so we left a bit before sundown. The fair continues through the 24th, and we got season passes, so we will be going back. It looks like tomorrow may be another Fair day. We’re going by the weather—tomorrow is supposed to be the coolest day all week. (Typically it can get into the low 100s around the time of the fair, so it becomes a real test of your survival skills. But tomorrow the predicted high is around 85.) We had a great time, and I got to try deep-fried artichoke hearts for the first time…they were delicious!!

I am still struggling to put my car back together. This dates from back in April, when I got back from a photo safari and my friend Mitch rolled the window back up and it got stuck in the down position and made a horrific grinding noise. (I have power windows in my 2005 PT Cruiser) Turns out the regulator broke, so I ordered the new part. What they sent me was a similar part to the original, but not the very same. So I have been struggling to see about replacements, refunds, and they kept telling me I just needed to move the old mounting bracket from the old part to the new one, but then the holes are not of the same pattern—so I have been grinding, drilling, and making several trips to the hardware store in an effort to get that stupid part shoe-horned into the door. And yesterday I got it finally in there—not working 100% (the window wobbles a little bit on the way up), but good enough. And so I went to put the door panel back on, and it turns out the linkage from the inside door handle to the actual latch broke off. So now I’m trying to get that back together, and I am feeling pretty snake-bitten on this whole thing. I have become convinced that the moment I successfully get the door back together, I’m going to take a celebratory drive and the engine will just drop out and fall on the ground. Sometimes I just fail at the engineering.

On the photography front, I am looking to mix up a new batch of chemicals today (the current batch was mixed almost a year ago). I’m still pushing forward with my plans to develop my first roll of color film by the end of 2016. Also, I am still working on trying to get this Hasselblad working again. I just replaced the light traps in the film magazines, so I think those are good to go. (The Hasselblad is a modular camera system. The core is a cube, and you can put different lenses on it, and also different film backs. This allows you to keep one magazine loaded with color film, and one with B&W…and you can switch back and forth. To allow this, you have what is known as a “dark slide”-- a thin metal plate that inserts into the film back. That protects the film from light exposure when you take the film magazine off. There are seals that press against that plate to keep light from sneaking past, and the old ones were worn-out on the two backs I have. So the backs should be good to go now.)

I picked up a new client this week—it is a Chinese Christian Ministry. I drove to Rohnert Park on Thursday and put a few hours of work in with them. It was a great experience, and I hope to work with them again soon! They are creating three 45-minute video documentaries about the history of Christianity in China. Very interesting stuff about all the missionary work.

Well, the day continues to heat up, so I had better get out there and try to get the door of the car put back together. I will talk with y’all soon!

  Marilyn Crabb UPDATE:  Hi! I survived six months of chemotherapy. I'll have my breast tumor and left axillary nodes removed on Friday, Feb. 13. Radiation will be next. Please pray that the surgeon does a good job and all my cancer is removed!

  Littleguys  UPDATE: (as of 10/25/2015)  
Amazing what an injection in the right place can accomplish! My back started really hurting over two years ago, to the point I couldn't show my horses "in hand" when I would have to walk beside them, etc, and it was painful to lean over to harness them. I was diagnosed with sciatica, meaning the hole in the vertebrae where the sciatic nerve leaves the spine to go to the left leg was filling up with arthritis.

But the doctors wouldn't fix it in 2014 because the Stage Zero Breast Cancer was more important. In 2015, cancer free, it was time to fix the back. I did get that injection for the sciatica last summer, and some relief, but that doctor told me something no other doctor had told me. Half of the pain I was experiencing as I walked, stood, etc was due to the sacroiliac joint where the spine meets the left side of the pelvis. Got a shot, well, three right in that joint Thursday and cannot believe how much better it is to walk and stand. Why couldn't they do that two years ago???  Not a magic wand, but so much better,
 
       
  Elsalynda (as of 3/27) Keep Elsalynda in your prayers. Elsa was recently in Mexico and had a great time until she was hospitalized there! Keep her in your prayers for continued good health for herself and her bird Nupi.

  Shari in Memphis UPDATE!!! We heard from Shari recently. She is now on the VacaNews mailing list, so we'll be able to keep in touch with her more easily. She tells us, "Hi guys! Shari in Memphis is alive. I've been having tons of health problems, so that's tons of doc appointments! I have moved to northern Arkansas, for health reasons, and looking forward to hub moving up here in a couple of years, when he retires. It's gorgeous in the country, and I love that we were able to find a place on a stream. Lots of wild animals around! I miss you all.

  Hello there, Everbuddy!  
 
It’s another warm day here in Vacaville! I have been staying inside to keep cool. Watched some lovely golf action in the United Kingdom this morning…they have very nice, cool summers. I actually get kinda jealous about that.

We’ve really been keeping our thinking caps on around here—I’ve been helping the Dude with all kinds of gadgets to design. There’s the tempering bath for the photo chemicals (heater/agitator rack to keep the temperature constant), the next version of the Light Brush, the “Hasselhack” camera body—for in case the Dude is never able to get the camera working again, a lens mount for the iPhone for hooking it up to the telescope…all kinds of vun things to create!

It has been very yummy around here too—the Dude and Dudette went to a cooking demo on the 4th of July, where they showed these gourmet varieties of virgin olive oil. Well, we have been enjoying some with California lime, some with roasted garlic, as well as different varieties of balsamic vinegar. And here I just used to chow down on anything I could get my little paws on, but now I have become a rather discerning rodent! Who would have thought of a “foodie” mouse? Now whenever I go into fine restaurants, I always ask for a wine list and inquire about the correct pairings for the various food types. And typically I get chased out of the establishment at the end of a broom. Those heathens—don’t they know that I am the mouse who puts the “cute” in their “charcuterie?” I’ll just get my limoncello elsewhere, thank you very much!

Cannoli Bites

 
     
  Ingredients:    
 

Cannoli cups:
   2 cups all-purpose flour
   2½ tablespoons granulated sugar
   1 teaspoon cocoa powder
   ½ teaspoon cinnamon
   1 pinch nutmeg (optional)
   ½ teaspoon salt
   ¼ cup butter, melted
   1 large egg white
   6-8 tablespoons apple juice or grape juice
   2 tablespoons white wine vinegar
   Vegetable oil cooking spray
Cannoli Filling
   12 ounces whole milk Ricotta

   cheese, strained
   8 ounces Mascarpone cheese
   ½ cup powdered sugar**
   ⅓ cup mini semi-sweet chocolate chips
   powdered sugar, for dusting (optional)
Optional toppings:
   Melted chocolate, chopped pistachios,

   sprinkles, toasted sweetened coconut


 
       
Directions:
 

For the cannoli cups:
Add flour, granulated sugar, cocoa powder, cinnamon, nutmeg and salt to a food processor and pulse until blended. Pour in melted butter and pulse until well combined then add egg white and pulse until blended. In a bowl combine juice and vinegar, with processor running slowly pour in juice mixture and pulse just until mixture begins to come together. Divide dough into two pieces, shape into balls and transfer to a resealable bag. Chill in refrigerator 30 minutes - 1 hour. Preheat oven to 400°F during last 10 minutes of refrigeration.

For the filling:
In a mixing bowl, using a rubber or silicone spatula, blend together Ricotta and Mascarpone cheese while running and pressing mixture along bottom of bowl to remove any lumps. Fold in powdered sugar. Cover and chill 30 minutes (or until ready to use).

Roll each chilled dough out on a lightly floured surface (dust top with flour too) into a 14-inch circle, to about an ⅛-inch thickness. Cut into circles using a 2½-inch round biscuit cutter. Transfer rounds to an ungreased mini muffin tin, pressing evenly into sides and bottom of muffin well. Spray tops evenly with vegetable oil spray.

Bake in preheated oven 11 - 13 minutes until lightly golden and slightly crispy. Remove from oven and transfer to a wire cooling rack to cool completely. Once cool dip tops in chocolate if desired then into coating if using (such as pistachios) and allow chocolate to set.

Remove cannoli filling from refrigerator, transfer to a piping bag fitted with a tip (or you can use a large resealable bag and cut the tip of the end). Pipe filling into cups and sprinkle with chocolate chips and dust with powdered sugar. For best results serve within 2 hours. Store in refrigerator.

**You can add 2 tablespoons more if you'd like it a little sweeter.

 
     
 

Indonesian Corn Cakes

 
  Ingredients:    

2 cups fresh corn kernels
3 eggs, beaten
3 tablespoons flour
2 tablespoons whipping cream
½ cup cooked shrimp, finely chopped
¼ cup celery, finely diced
2 green onions, including tops, finely chopped
2 tablespoons cilantro leaves, chopped, plus leaves for garnish
2 garlic cloves, minced
1 teaspoon salt
¼ teaspoon white pepper
1 tablespoon butter
1 tablespoon oil

 

       
  Directions:    
  Combine the corn, eggs, flour and cream in a food processor and blend until the corn is finely chopped and appears creamy, scraping down the sides as needed. Remove to a bowl. Add the shrimp, celery, onions, cilantro, garlic, salt and pepper and mix well.

Heat the butter and oil in a large skillet.

For each cake, add a heaping tablespoon of the corn mixture to the skillet. Keep the cakes separated and press to flatten slightly.

Cook over medium heat until golden brown on the bottom, then turn and cook the other side until golden, about 3 minutes total.

Continue until all the cakes are cooked, placing them on a platter and keeping them warm. Serve as an appetizer or side dish, garnished with cilantro leaves, if desired.

  With some misgivings, we left a young baby-sitter in charge of our three energetic youngsters. When we returned a few, hours later, she was sitting alone watching TV. I went to check on the children, and found them in our narrow hallway.

By bracing their arms and legs against the walls, two of them had climbed up to the ceiling. "The baby-sitter taught us how," they said gleefully.

The sitter joined me, her face a deep red. "Since they had me climbing the walls, I figured they might as well be too," she stammered.
 
     
  My uncle was giving me the grand tour of his house. The bathrooms had excessively mirrored walls but his wife preferred not to look at herself in such a compromising position. She even went so far as to place a "modesty plant" so that it obscured the view.

Now I don't think there is anything wrong with mirrored walls in the bathroom. I told my uncle: "You should be able to sit and reflect."

It's not a figment of your imagination; there is a similarity between simulacrum and simulate. Both of those English words derive from simulare, a Latin verb meaning "to copy, represent, or feign." In its earliest English uses, simulacrum named something that provided an image or representation (as, for instance, a portrait, marble statue, or wax figure representing a person). Perhaps because a simulacrum, no matter how skillfully done, is not the real thing, the word gained an extended sense emphasizing the superficiality or insubstantiality of a thing.
