The pop-out chat link no longer uses the old style chat. However, it is still a nice way to save on memory and be able to refresh without losing both chat and video.

The easiest way to do this is to open the pop-out chat in a browser window. Log in. (Type a period in the chat line—hit enter. This will open the login screen.) Size this chat window to equal about 1/3 of your desktop space.

Then open a new window or tab (Ctrl-T or Ctrl-N in most browsers) and use it to open the pop-out video. If you opened a new tab, you can then click on the tab and drag it to an open space on your desktop. Size it to about 2/3 of your desktop space beside the chat.

Now you have both open and can refresh one without disturbing the other. You can resize either without resizing the other.

  Hello Vriends,  
HAPPY EASTER!!! Yes, it is the time for eggs and rabbits and Spring and all that. So far I have spent my Easter by going out to Lagoon Valley to take more photos. I went with Mitch, the president of our photography club. We even managed to see the Easter bunny! Well, maybe it wasn't exactly the E.B. himself. I guess he is supposed to be a cute little cottontail bunny. These were definitely big, lanky, jackrabbits. And there were lots of them.

I wanted to go out to Lagoon Valley this morning because according to the weather reports we were supposed to get some nice clouds in today. I was hoping for the puffy variety, because I thought those would look amazing over the valley. Well, there was nothing. Zip. It was absolutely blue, cloudless sky. But then I figured we would at least get some nice fog in the park. But when we got there, nothing. Zip. It was probably the least photogenic that I have ever seen that park in all the times I have been driving out there. So we mostly shot a lot of pictures of an egret in the water, and of a group of turkey vultures that were gathered and sunning themselves to warm up in the morning.

Do you know what a group of vultures is called? A wake! Mitch and I got a good chuckle out of that. I checked it on my smartphone while we were waiting for the egret to wander back into the marsh.

Well, I need to get busy--I need to address the one casualty of the day. When I was dropping Mitch off at his house, the passenger side window would not go up, and the motor made a horrible grinding noise. Hopefully the window is not broken, but it is definitely stuck in the down position. So I need to go make another effort to pry the door panel off. Wish me luck!

  TheDaddyBird, DotRot and ChatterChopz CC came home from karate on Monday night sporting a new belt. She has been promoted! She is no longer a blue belt but is now wearing a green stripe belt—green belt with a white stripe, much like this one:
This belt represents the half-way point between blue and full green.
She was honored for her leadership and her exemplary teaching of the younger children. Needless to say, we are quite proud of her.
 
       
  AnnSavage On Oct. 27, I received three awards in the San Diego Press Club Excellence in Journalism competition! I write for Ramona Home Journal and Julian Journal, and was honored with two first-place awards and one third-place award for my articles!

  Jes Jes has requested prayers. She has lost a close friend and is also facing some rather daunting medical tests and procedures. She is, of course, worried and stressed, and in need of all our prayers and healing vibes.  
       
  KSBorn KSBorn has sent us an update. She writes, "I’m still in the midst of chemo and hormone blocker every day. In 2008 I had breast cancer and it returned July 2014 same breast cancer in my lung now and 2 lymph nodes positive. I’m getting ready to have a surgery to get a port. I will probably be on chemo for life. I have numerous tests monthly.
 
Thank you so much for the prayers and please continue."
 
       
  Marilyn Crabb UPDATE:  Hi! I survived six months of chemotherapy. I'll have my breast tumor and left axillary nodes removed on Friday, Feb. 13. Radiation will be next. Please pray that the surgeon does a good job and all my cancer is removed!

  Littleguys  UPDATE: (as of 10/25/2015)  
Amazing what an injection in the right place can accomplish! My back started really hurting over two years ago, to the point I couldn't show my horses "in hand" when I would have to walk beside them, etc, and it was painful to lean over to harness them. I was diagnosed with sciatica, meaning the hole in the vertebrae where the sciatic nerve leaves the spine to go to the left leg was filling up with arthritis.

But the doctors wouldn't fix it in 2014 because the Stage Zero Breast Cancer was more important. In 2015, cancer free, it was time to fix the back. I did get that injection for the sciatica last summer, and some relief, but that doctor told me something no other doctor had told me. Half of the pain I was experiencing as I walked, stood, etc was due to the sacroiliac joint where the spine meets the left side of the pelvis. Got a shot, well, three right in that joint Thursday and cannot believe how much better it is to walk and stand. Why couldn't they do that two years ago???  Not a magic wand, but so much better,
 
       
  Elsalynda (as of 3/27) Keep Elsalynda in your prayers. Elsa was recently in Mexico and had a great time until she was hospitalized there! Keep her in your prayers for continued good health for herself and her bird Nupi.

  Shari in Memphis UPDATE!!! We heard from Shari recently. She is now on the VacaNews mailing list, so we'll be able to keep in touch with her more easily. She tells us, "Hi guys! Shari in Memphis is alive. I've been having tons of health problems, so that's tons of doc appointments! I have moved to northern Arkansas, for health reasons, and looking forward to hub moving up here in a couple of years, when he retires. It's gorgeous in the country, and I love that we were able to find a place on a stream. Lots of wild animals around! I miss you all.

  Hello there, Everbuddy!  
 
Happy time of bunnies to all! Bunnies and candies and eggs--yum! I went with the Dude out to Lagoon Valley today, and that was a lot of fun getting a chance to run around the fields again. Of course, I had to be careful because of all the predatory birds out there. Those vultures were sure giving me the look-over, but I suspect I am so small that I'm probably not worth the effort to catch. Of course, I am not going to remain small if I don't lay off those Cadbury eggs. Those are so yummy!

Tonight we are going to have a roast chicken. Usually for today there would be a ham or roast, but the Dude and Dudette are trying to be more cost-conscious. Plus, there is the Dude's foot to consider--can't eat all the usual foods. So roast chicken it is!

Lasagna Stuffed Shells

 
     
  Ingredients:    
 

1 box jumbo shells (about 24 shells)
½ lb ground beef
½ lb ground italian sausage
salt and pepper
2 cloves garlic, minced
1 small onion, chopped
1½ cups spinach or chopped kale
2 (8oz) cans tomato sauce
1 (6oz) can tomato paste
1 (14.5-ounce) can diced tomatoes, undrained
2 teaspoons Italian seasoning (or a mix of dried oregano and basil)
1 cup ricotta cheese
1 egg
2 cups mozzarella cheese, divided
½ cup freshly grated parmesan cheese, divided


 
       
  Directions:    
  In a large skillet over medium high heat brown the beef and sausage. Drain grease. Season with salt and pepper. Add garlic and onions and cook for 2-3 minutes. Place everything in a food processor and pulse 2-3 times until the meat is crumbled really small. Set aside.

Add tomato sauce, and tomato paste to the pan and stir well to combine. Add diced tomatoes and seasonings. Cover and let simmer for 20-30 minutes on medium-low heat.

Meanwhile, cook the jumbo pasta shells according to package instructions, until al-dente. Drain from water and lay out on a large dish to cool, so that they don't stick together.

Add the ricotta cheese, egg, 1 cup mozzarella, and ½ cup parmesan cheese to a large mixing bowl and mix well to combine.

Add meat mixture and chopped spinach to the tomato sauce and stir to combine. Pour about ½ of the tomato sauce mixture into the bowl with the ricotta (you want to save the other half for pouring on top of the stuffed shells). Stir to combine.

Spoon some of the reserved tomato sauce into the bottom of a 9x13'' pan. Stuff each cooked shell with a heaping 2 tablespoons of the ricotta/tomato mixture and set them face up in the pan. (You should be able to fit 4 shells wide and 6 shells long.)

Spoon the remaining red sauce over the top of all of the stuffed shells. Sprinkle with remaining mozzarella and parmesan cheese.

Cover with foil and bake at 350°F for 20 minutes. Remove foil and bake for 10 more minutes. Enjoy!
 
     
 

Shepherd’s Pie Loaded Baked Potatoes

 
  Yes, I know Shepherd’s Pie is supposed to be made with lamb. Yes, I know Shepherd’s Pie has a more traditional brown gravy-type sauce. Yes, I know these potatoes aren’t mashed. Just go with it, okay?  
  Ingredients:    

4-6 baking potatoes
1 pound lean ground beef
½ medium onion, chopped (roughly ½ cup)
1 garlic clove, crushed or minced
¾ cup tomato paste (one 6-ounce can)
¼ cup Worcestershire sauce
1½ cups beef broth
2 cups frozen mixed vegetables, thawed (carrots, peas, corn, and green beans)
1 cup (about 4 oz.) shredded cheddar cheese

       
  Directions:    
  Bake the potatoes in a 400°F oven for about an hour or until they can be pierced easily with a fork. Or you can cook in the microwave for about 10 minutes, rotating after five minutes.

While the potatoes are cooking, heat a skillet over medium heat, add the ground beef, onion, garlic, and a pinch of salt and pepper. Cook, breaking up the meat, until it is browned. Drain any excess grease.

Stir in the tomato paste, Worcestershire sauce, and beef broth.

Add the vegetables, bring to a simmer, and cook until thickened slightly. Season to taste with salt and pepper.

Cut a slit down the length of one potato then another one perpendicular to make an "x". Squeeze the sides of the potato to open it up and place in a glass baking dish. Repeat with the remaining potatoes.

Spoon the filling into the potatoes and top with shredded cheese.

Return to a 400°F oven for about 5 minutes, or place under the broiler for 2 or 3 minutes, or until cheese is melted and lightly browned.

Here's a couple of photos I took this last week.

One I took as I walked around in San Francisco last week,

and another is from a news story--somebody vandalized

 one of the signs to have it say "Superb Owl"

This iris grew only about 3 inches from the ground, but it was at almost the size of my hand!
There was no stem so I just put it into a little bowl. It just says SPRING to me…

  Two sea monsters were swimming around in the ocean, looking for something to do.

They came up underneath a ship that was hauling potatoes.

Bob, the first sea monster, swam underneath the ship, tipped it over and ate everything on the ship.

A little while later, they came up to another ship, again hauling potatoes. Bob again capsizes the ship and eats everything onboard.
The third ship they found was also hauling potatoes and Bob once again capsized it and ate everything.

Finally his buddy Bill asked him, "Why do you keep tipping over those ships full of potatoes and eating everything on board?"

Bob replied, "I wish I hadn't, but I just can't help myself once I start. Everyone knows you can't eat just one potato ship."

The meaning of obnubilate becomes clearer when you know that its ancestors are the Latin

terms ob- (meaning "in the way") and nubes ("cloud"). It's a high-flown sounding word, which may be why

 it often turns up in texts by and about politicians. This has been true for a long time. In fact, when the

 U.S. Constitution was up for ratification, 18th-century Pennsylvania statesman James Wilson used

obnubilate to calm fears that the president would have too much power: "Our first executive magistrate

 is not obnubilated behind the mysterious obscurity of counsellors…. He is the dignified,

 but accountable magistrate of a free and great people."
