Channel Links
 
The pop-out chat link no longer uses the old style chat. However, it is still a nice way to save on memory and be able to refresh without losing both chat and video.

The easiest way to do this is to open the pop-out chat in a browser window. Log in. (Type a period in the chat line—hit enter. This will open the login screen.) Size this chat window to equal about 1/3 of your desktop space.

Then open a new window or tab (Ctrl-T or Ctrl-N in most browsers) and use it to open the pop-out video. If you opened a new tab, you can then click on the tab and drag it to an open space on your desktop. Size it to about 2/3 of your desktop space beside the chat.

Now you have both open and can refresh one without disturbing the other. You can resize either without resizing the other.

  Hello Vriends,  
Happy Sunday to y'all, and happy chat day! Yes, I'll be turning on the old microphone and camera this evening, and Zorro will hog the screen-time as usual. (That's okay, though--he's cuter anyway!) I will probably be going on and on about what happened last night, because I'm still buzzing over it. We had the opening at the Vacaville Art Gallery for our photo club's annual contest. Last year I entered 8 of my photos and came away with one 3rd place ribbon. I would have liked to have fared better, but realistically I was stoked. It was my first ever photo contest, and I learned a lot about how to shoot better pictures. I just rolled up my sleeves and said "next year I'll get better!"

So this year I entered 13 entries. The judges did their thing in the early afternoon, and then our event started at 4pm. I got there at 4:30 with fingers crossed. Blew me away--one ribbon for third place, one ribbon for second place, and FOUR blue ribbons! Plus, one of my Lagoon Valley photos sold within the first hour of the event. I'm pretty sure that is the first time I have ever sold a photograph! Needless to say, I was overwhelmed and bouncing off the walls. Now I am going to get things cleaned up and get entries ready for the upcoming county fairs. Then based on how those go, I might be looking at entering the State Fair in the fall!

So I hope you can come by this evening for the chat, and I will talk some more about the event and show some of the pictures. So if you feel like taking a break from this insane political campaign, stop on by! And stop by the chat room in the afternoon and help write the StoryTime story for Zorro to read!

  Jes Jes has requested prayers. She has lost a close friend and is also facing some rather daunting medical tests and procedures. She is, of course, worried and stressed, and in need of all our prayers and healing vibes.  
       
  KSBorn KSBorn has sent us an update. She writes, "I’m still in the midst of chemo and hormone blocker every day. In 2008 I had breast cancer and it returned July 2014 same breast cancer in my lung now and 2 lymph nodes positive. I’m getting ready to have a surgery to get a port. I will probably be on chemo for life. I have numerous tests monthly.
 
Thank you so much for the prayers and please continue."
 
       
  Marilyn Crabb UPDATE:  Hi! I survived six months of chemotherapy. I'll have my breast tumor and left axillary nodes removed on Friday, Feb. 13. Radiation will be next. Please pray that the surgeon does a good job and all my cancer is removed!

  Littleguys  UPDATE: (as of 10/25/2015)  
Amazing what an injection in the right place can accomplish! My back started really hurting over two years ago, to the point I couldn't show my horses "in hand" when I would have to walk beside them, etc, and it was painful to lean over to harness them. I was diagnosed with sciatica, meaning the hole in the vertebrae where the sciatic nerve leaves the spine to go to the left leg was filling up with arthritis.

But the doctors wouldn't fix it in 2014 because the Stage Zero Breast Cancer was more important. In 2015, cancer free, it was time to fix the back. I did get that injection for the sciatica last summer, and some relief, but that doctor told me something no other doctor had told me. Half of the pain I was experiencing as I walked, stood, etc was due to the sacroiliac joint where the spine meets the left side of the pelvis. Got a shot, well, three right in that joint Thursday and cannot believe how much better it is to walk and stand. Why couldn't they do that two years ago???  Not a magic wand, but so much better,

  Shari in Memphis UPDATE!!! We heard from Shari recently. She is now on the VacaNews mailing list, so we'll be able to keep in touch with her more easily. She tells us, "Hi guys! Shari in Memphis is alive. I've been having tons of health problems, so that's tons of doc appointments! I have moved to northern Arkansas, for health reasons, and looking forward to hub moving up here in a couple of years, when he retires. It's gorgeous in the country, and I love that we were able to find a place on a stream. Lots of wild animals around! I miss you all.

  Hello there, Everbuddy!  
 
Wow, the Dude sure is excited about his pickshures. He told me all about it after he and the VacaChick got home. He didn't take me to the event, but I can understand why. He said it was a wine and cheese shin-dig. You could keep the wine, but as for the cheese--I'm pretty sure I would have been going full-tilt platter diving. He was cool about it though--he snuck me a couple of pieces of Monterey Jack and cheddar in his pocket. It's all good!

The Dude was busy with work projects this week, but I did help him with some of the work cutting mattes for the photos. I'm really good with measuring--probably because all the numbers on the rulers look very big to me. I let the Dude do the actual cutting. After that whole incident that happened with my three visually-impaired cousins and their run-in with the farmer's wife, I've not been too keen about being around sharp instruments. (That was one of the first big claims paid out by Meadow Mutual Insurance!)

I hope you can stop by for the story writing today, and then for the chat when you can see me read it! I have to read quickly this time, because Madame Secretary is going to be coming on at 7pm. Oh, and speaking of time, don't forget to set you clocks forward today if you haven't already, otherwise you will miss the chat!!

Sugar Free Fruit Jam

 
     
  Ingredients:    
 

Spiced Peach Jam
    2 cups peaches, processed, not pureed, in blender
    2 cups peaches, mashed
    ¼ cup lemon juice
    ½ teaspoon cloves, allspice, cinnamon
    1 teaspoon vanilla extract
    1½ tablespoons Stevia Sweetener (Be sure to

        check the sugar equivalency charts.)
    3 teaspoons pectin powder
    4 teaspoons calcium water

Raspberry-Peach Jam
    2 cups peaches, processed, not pureed, in blender
    2 cups raspberries, mashed
    ¼ cup lemon juice
    1 teaspoon almond extract
    1½ tablespoons Stevia Sweetener (Be sure to

        check the sugar equivalency charts.)
    2½ teaspoons pectin powder
    3 teaspoons calcium water


 
       
  Directions:    
  Important note: It’s important that the pectin and calcium water come from Pomona’s Universal Pectin. These pectins work with sugar substitutes, while others don’t. Pomona’s is specially made for low to no-sugar jamming.

Make calcium water. Put ½ teaspoon white calcium powder and ½ cup water in a small, clear jar with lid. Store in refrigerator between uses. Lasts a number of months. Shake well before using.

Wash and rinse jars; place canning rack and jars in canning pot with water just to the just barely cover the rim. Bring water to a boil, turn down heat, and let jars stand in hot water.

Prepare fruit. Most recipes call for 4 cups of mashed/processed fruit. Measure 4 cups fruit into pan with spices, extracts, and lemon or lime juice (if called for in recipe.) Do not add sweetener yet. Stir well. Add proper amount of calcium water from jar into pan; stir well. Bring fruit mixture to a gentle simmer.

In a small pot, bring ¾ cup water to a boil. Put water in a blender/processor and add proper amount of pectin powder. Vent lid and blend 1-2 minutes, until all powder is dissolved.

Bring fruit up to a boil and add pectin gel. Stir well. Add Stevia Sweetener and stir well. Return fruit to a boil, then remove from heat.

Bring one jar and a 2 piece lid out of the hot water. Insert funnel and fill jars to ¼-inch of top. Wipe any excess off the rim and screw on 2-piece lid. Place jar in water and repeat until the jam fills the last jar. Leftover jam can be put in a jar and into the fridge. Try to do this step swiftly. Bring water to a boil and process jars for 10-15 minutes. Remove from water carefully, and let cool. You may hear popping as the jars cool, but don’t shake or jostle them for 24 hours. After that, check seals—lids should be sucked down. Any jars that didn’t seal can be refrigerated.
 
     
 

Shrimp Pot Pie

 
  Ingredients:    

2 pie crusts
4 tablespoons butter
1½ teaspoons Old Bay seasoning
½ teaspoon salt
2 cloves garlic
1½ cups sliced fresh mushrooms
4 tablespoons flour
½ cup white wine (or chicken/vegetable stock)
1 cup half and half
½ cup grated Parmesan
1 cup frozen baby onions
1 cup frozen peas
1 egg white
15 ounces popcorn shrimp , cooked

       
  Directions:    
  Preheat your oven to 350°F.

Roll out your first pie crust and put it in a deep dish 9-inch pie pan. Trim the dough to edge of the pie pan and set aside.

In a large sauce pan, melt the butter. Once melted, add the salt, old bay seasoning, salt, garlic, and mushrooms. Cook until the mushrooms are tender. Stir in the flour.

Very slowly, whisk in the wine, about a tablespoon at a time, until fully combined. Working just as slowly, add the half and half. Once it is fully combined, stir in the parmesan, baby onions, and peas.

Finally, stir in the cooked shrimp. The mixture will be very thick.

Pour into the prepared pie crust and level off so it is as even as possible.

Top with the remaining pie crust. Trim the crust so about a half an inch hangs off the edge. Fold the pie crust under the bottom crust. Brush the crust with the whisked egg white. Cut a few holes in the top of the crust and bake for 40 to 45 minutes or until the crust is golden brown.

Let stand 10 minutes before cutting and serving.

  My grandson, Chris, has worn glasses since the age of three. When he was in the first grade he came home one day very distressed. Wanting to find out what was the matter, his mother asked, "Chris, what happened today to upset you so much?" He answered, "It's not fair -- I'm not allowed to go to the library." His mother became very concerned and asked, "Why aren't you allowed to go to the library?" With a tearful reply he said, "Because, in order to go to the library you have to have super-vision, and I wear glasses!"

There really is no such thing as a single remedy for all that ails us. But that hasn't kept English speakers

from creating not just a single word, but several words, that mean "cure-all":

catholicon, elixir, nostrum, panacea, and today's word, theriac. When we first used theriac,

it meant "an antidote for poison"—for any and all poisons, that is. That's how our

Roman and Greek forebears used their theriaca and thēriakē, which derive ultimately from thēr,

 the Greek word for "wild animal." The first theriac was supposedly created by the first-century Greek

 physician Andromachus, whose concoction consisted of some 70 drugs pulverized with honey.

Medieval physicians created even more elaborate theriacs to dose a plague-dreading populace,

for whom the possibility of a cure-all didn't seem too wild a notion at all.
