The pop-out chat link no longer uses the old style chat. However, it is still a nice way to save on memory and be able to refresh without losing both chat and video.

The easiest way to do this is to open the pop-out chat in a browser window. Log in. (Type a period in the chat line—hit enter. This will open the login screen.) Size this chat window to equal about 1/3 of your desktop space.

Then open a new window or tab (Ctrl-T or Ctrl-N in most browsers) and use it to open the pop-out video. If you opened a new tab, you can then click on the tab and drag it to an open space on your desktop. Size it to about 2/3 of your desktop space beside the chat.

Now you have both open and can refresh one without disturbing the other. You can resize either without resizing the other.

  Hello Vriends,  
I hope everybody has been having a good week and weekend. And if you are anywhere back east, I hope you are not getting snowed-in. We have been having some rain out west here, and the reservoirs levels are climbing nicely. We'll try to take all the precipitation out of the clouds before they go east...we'd be happy to do so.

I just had a workshop with the photography club yesterday, and the focus (no pun intended) was on shooting miniatures. Basically, that's where you take miniature figurines and shoot them with real life-sized objects. For instance, the instructor of the workshop had done one photo where he took a figure that was working a bicycle pump, and he put them next to some raisins and grapes. He made it look as though the person was pumping the raisins up to restore them to grapehood. So it's kind of whimsical. Dot--you probably would have had a lot of fun in this class! I found some little figures of astronauts, so I had them exploring a planet represented with a cantaloupe. Also added some quartz and shined lights through them and had the astronauts exploring that. It was pretty fun.

Speaking of things astronomical, did you hear all the excitement over the discovery of a possible 9th planet out beyond Pluto? I think the jury is still out on that one, but it is interesting to read the articles about it. There may indeed be lots of planets way out in the Oort cloud...there is just no way to detect them all...at least not yet.

Well, it looks like the football season is drawing to a close. Once again, I have no horse in this race, so all I have to say is--may the best team win. And no cheating!!

Well, I am off to meet the VacaChick in Oakland, and to have lunch with some mutual friends. So until next week!

  TheDaddyBird, DotRot and ChatterChopz This has been the most horrible move. We're comfy in our new house, but there's still quita a lot at the old house. We broke an axle on the van during an ice storm early in the month so that really hindered our ability to transport things. But we'll have everything done this week. We're getting there. Pray for us in this rather stressful time of moving.  
       
  AnnSavage On Oct. 27, I received three awards in the San Diego Press Club Excellence in Journalism competition! I write for Ramona Home Journal and Julian Journal, and was honored with two first-place awards and one third-place award for my articles!

  Jes Jes has requested prayers. She has lost a close friend and is also facing some rather daunting medical tests and procedures. She is, of course, worried and stressed, and in need of all our prayers and healing vibes.  
       
  KSBorn KSBorn has sent us an update. She writes, "I’m still in the midst of chemo and hormone blocker every day. In 2008 I had breast cancer and it returned July 2014 same breast cancer in my lung now and 2 lymph nodes positive. I’m getting ready to have a surgery to get a port. I will probably be on chemo for life. I have numerous tests monthly.
 
Thank you so much for the prayers and please continue."
 
       
  Marilyn Crabb UPDATE:  Hi! I survived six months of chemotherapy. I'll have my breast tumor and left axillary nodes removed on Friday, Feb. 13. Radiation will be next. Please pray that the surgeon does a good job and all my cancer is removed!

  Littleguys  UPDATE: (as of 10/25/2015)  
Amazing what an injection in the right place can accomplish! My back started really hurting over two years ago, to the point I couldn't show my horses "in hand" when I would have to walk beside them, etc, and it was painful to lean over to harness them. I was diagnosed with sciatica, meaning the hole in the vertebrae where the sciatic nerve leaves the spine to go to the left leg was filling up with arthritis.

But the doctors wouldn't fix it in 2014 because the Stage Zero Breast Cancer was more important. In 2015, cancer free, it was time to fix the back. I did get that injection for the sciatica last summer, and some relief, but that doctor told me something no other doctor had told me. Half of the pain I was experiencing as I walked, stood, etc was due to the sacroiliac joint where the spine meets the left side of the pelvis. Got a shot, well, three right in that joint Thursday and cannot believe how much better it is to walk and stand. Why couldn't they do that two years ago???  Not a magic wand, but so much better,

  Shari in Memphis UPDATE!!! We heard from Shari recently. She is now on the VacaNews mailing list, so we'll be able to keep in touch with her more easily. She tells us, "Hi guys! Shari in Memphis is alive. I've been having tons of health problems, so that's tons of doc appointments! I have moved to northern Arkansas, for health reasons, and looking forward to hub moving up here in a couple of years, when he retires. It's gorgeous in the country, and I love that we were able to find a place on a stream. Lots of wild animals around! I miss you all.

It is I, Zorro the Mouse. Yes, a whole new planet--and a further chance for me to get my hopes up and wish for it to be made of cheese. I tell you, if any of these celestial object could just be made of a nice gouda, I'd be into the steampunk rocketship in a flash, and off we'd go!

Anyway, not much else is new here--just staying inside where I can be comfy and warm. Lots of rain falling outside, which is great--I look forward to maybe doing some water skiing in the lakes next summer! As soon as somebody shows me how. And gets a boat. Oh well...details, details.

Apple Roses

 
     
  Ingredients:    
 

3 apples
2 sheets of puff pastry, thawed
6 tablespoons of apricot or raspberry preserves
2 tablespoons of water
Juice of ½ lemon or 2 tablespoons of lemon juice
1 tablespoon cinnamon
3 tablespoons sugar

 
       
  Directions:    
  Remove puffed pastries from freezer and thaw according to package.
Slice the apples in half from top to bottom. Remove the core ends and then scoop out the core in the center. Slice the apples into very thin slices (side to side, not top to bottom).

Fill a medium sized bowl half full of water. Squeeze the lemon juice into the water. Place the sliced apples in the water and microwave for 5 minutes until slightly tender. Drain the apples into a colander.

When pastries are thawed, place them flat on a floured surface. Roll the pastries out with a rolling pin the flatten just a little more. Cut each pastry into 6 equal slices.

Mix preserves with water. One at a time, spoon preserves mixture onto a slice of pastry. Place 7-9 apple slices along one half of the pastry slice with the peel side facing out, slightly beyond the edge of the pastry. Fold the pastry in half to cover the apples.

Starting on one end, roll the pastry and apples to the other end of the pastry. Place in a muffin tin. Continue with the other pieces of pastries until you have 12 apple roses.

Mix cinnamon and sugar and sprinkle over roses.

Place a pan of water on the bottom rack of oven so the bottom of pastries do not burn. Bake at 375°F for 40 -45 minutes.

Dust with powdered sugar, if desired.

 
     
 

Scotch Eggs

 
  Ingredients:    

10 large eggs , 2 beaten
2 pounds breakfast sausage
1 small bunch fresh chives, finely chopped
1 small bunch fresh parsley, leaves picked and finely chopped
¼ teaspoon nutmeg
1 tablespoon English mustard
Sea salt
Freshly ground black pepper
plain flour, for dusting
6 ounces breadcrumbs or panko
Vegetable oil for frying
3 tablespoons vegetable or corn oil

       
  Directions:    
  Put the first 8 eggs into a pan of boiling water. Boil for 5 to 6 minutes, then transfer to a bowl of cold water. Once cooled, carefully peel them.

Put the sausage meat into another bowl with the herbs, nutmeg, mustard and a good pinch of salt and pepper. Give it all a good mix together then divide into 8 balls.

Have 3 plates ready - one with a small handful of flour, one with the beaten eggs and a third with the breadcrumbs. To make the Scotch eggs, start by flouring your hands. In the palm of one hand, flatten one of the sausage balls into an oval-shaped pattie. Roll a peeled egg in flour, then pop it in the middle of the pattie. Gently shape the meat evenly around the egg, moulding it with your hands.

Roll the meat-wrapped egg in the flour, shake off any excess, then dip into the beaten egg, followed by the breadcrumbs. Roll in the egg and breadcrumbs again for a really good coating.

Heat the oil in a deep pan or deep fat fryer to about 300ºF. Carefully lower the eggs into the pan and cook for about 4 minutes, turning them every so often, until golden. Remove with a slotted spoon and drain on kitchen paper. (If you’re worried about the meat being under-cooked, deep-fry the scotch eggs until they’re golden and crispy, then pop them in a hot oven for a couple of minutes.)

Cool the eggs slightly, then arrange them on board with a good piece of Scottish Cheddar, some pickle and a few pickled onions.

If you'd prefer to bake instead of frying, prepare eggs as above and place on an ungreased baking sheet. Bake at 400°F for 35 minutes or until sausage is thoroughly cooked and no longer pink near egg.

A Male American Human in the dead of winter was quite a find for them!
This Long Tailed Duck and Hooded Crow were among several species to spot

The Latin antecedent of expatiate is exspatiari, which combines the prefix ex- ("out of")

with spatiari ("to take a walk"), itself from spatium ("space" or "course").

Exspatiari means "to wander from a course" and, in a figurative sense, "to digress."

But when English speakers began using expatiate in the mid-16th century, we took "wander"

to mean simply "to move about freely." In a similar digression from the original Latin, we began

using expatiate in a figurative sense of "to speak at length." That's the sense of the word

most often used these days, usually in combination with on or upon.
